Our chef...

Holding a degree in culinary arts from the Institut Paul Bocuse in Lyon, France. Chef Marco trained in top kitchens around the world, including Michelin star Trois Domes and L’Alexandrin in Lyon, as well as Via Veneto in Barcelona, Spain. His highest accolade has been being part of the team to win 3 Michelin Stars in Massimiliano Alajmo’s Ristorante Le Calandre in Rubano, Italy.
Before settling in Austin, where his family roots reeled him in, chef Marco was the principle in the development of several of his own concepts in Mexico and the US. He also led projects in all aspects of start-ups, including multiple "restaurant rescues", which took him to all four corners of the US. A long track record of fixing operations include, The Modern hotel in Honolulu, The Boxer hotel in Boston, The Plaza hotel in El Paso, and the iconic Stanley Hotel in Estes Park, among others.
With extensive domestic and international experience, chef Marco presents The Scarbrough, where he showcases culinary gems, techniques, and recipes that he picked up and mastered during his 25-year career, executed in a creative, yet simple way.
